Friends at Kaido,
I visit you every couple of weeks when I'm enjoying the luxury of days-off and can indulge my time there without feeling rushed. I come alone and sit by the window. While the window has its outward distractions, I actually sit there to meditate up the confluence of the three bamboo sticks next to the window in the corner.... as there is something about the beauty of their union that reminds me of the sushi chefs working in harmonious tandem. Be that as it may, and not that it is the least bit important that you remember me.... I am tall, tan, and narrow like those sticks, save the addition of very long brown hair. I come to Kaido to rest, to find sanctuary in the ambience and the joy of those who work there. It is there at your restaurant that I may dine comfortably and slowly, enjoying my sushi at my own pace, as I have an inoperable swallowing condition that requires that I eat very slowly. I never feel rushed in your restaurant, so I come there for the sake of my peace and health, and to explore the subtleties of your exquisite creations as I please. Matthew was very kind in thanking me for my visit this evening. I always depart with such serenity... as the joy of my experience derives as much from the hearts of those creating the dishes as it does from the dishes themselves. I see the chefs creating their works of art and their smiles tell me that the dishes will be filled with happiness and soul. Thank you... all of you... the beautiful servers, hostesses, and chefs for your gift of beauty and fine culinary art that you offer this troubled world.
